This Dirty Cajun Orzo is made with seasoned ground beef, sausage, tender peppers and onions, and a rich, savory tomato sauce that's perfect for an easy weeknight dinner.
Cook the orzo according to the package instructions, then set aside. Meanwhile, heat the olive oil in a large skillet over medium high heat. Add the diced bell peppers and onions, and cook for about 3 minutes. Add the ground beef and sausage, and continue cooking until the meat is fully browned. Stir in the minced garlic during the last minute of cooking.
Stir the tomato paste into the meat mixture until evenly combined. Let it cook for 1–2 minutes. If there is excess grease in the skillet, drain it, leaving about 4–5 tablespoons behind. Sprinkle the flour over the mixture and stir until fully incorporated. Cook for 2–3 minutes, stirring frequently, to create a roux.
Gradually pour in the beef broth, stirring continuously until smooth. Add the Cajun seasoning, beef bouillon powder, onion powder, garlic powder, salt, and black pepper. Stir well and bring the mixture to a gentle simmer, allowing the sauce to thicken.
Add the cooked orzo to the skillet and toss until everything is evenly coated in the sauce. Serve warm and enjoy!
