This Cajun Dirty Rice is bold, hearty, and packed with seasoned ground beef, the classic Cajun holy trinity, and layers of smoky Cajun flavor all stirred together with fluffy white rice in one skillet.
Add the olive oil, onions, bell peppers, and celery to a hot skillet over medium-high heat. Cook for 4–5 minutes, or until the vegetables begin to soften. Add the ground beef and cook until no pink remains, then drain all but about 4 tablespoons of the grease.
Stir in the tomato paste until well combined. Season with Cajun seasoning, onion powder, garlic powder, beef bouillon powder, salt, and black pepper, stirring to evenly coat the meat and vegetables.
Sprinkle in the flour and stir until fully incorporated. Cook the roux for 2–3 minutes, stirring frequently.
Add the cooked rice and stir until everything is evenly combined. Serve and enjoy!
