One Pot Chicken and Sausage Jambalaya
5 mins prepServes 6
This One Pot Chicken and Sausage Jambalaya is a bold hearty Cajun dinner packed with smoky sausage, juicy chicken, and perfectly seasoned rice all cooked together in a single skillet
0 Heat a large skillet over medium high heat. Add the sausage and cook for 5–6 minutes until browned. Remove and set aside.
1 Add the chicken to the same skillet and cook for 7–9 minutes until fully cooked through. Remove and set aside.
2 Add the celery, onions, and bell peppers to the skillet. Sauté for 7–8 minutes. Stir in the minced garlic and cook for 1 more minute.
3 Add the tomato paste and rice, stirring until combined. Pour in the chicken broth and diced tomatoes, then add the seasonings, sausage, and chicken. Stir everything together and bring to a simmer.
4 Reduce heat to low, cover, and cook for 15–20 minutes, stirring occasionally to prevent sticking. Serve once the rice is fully cooked.
