Cheesy Meatball Pasta is a hearty pasta dinner featuring juicy seasoned meatballs and tender shell pasta smothered in a rich, creamy tomato and melted Colby Jack cheese sauce.
Cook the pasta according to the package instructions. While the pasta cooks, add the bread crumbs to a large mixing bowl. Crack in the egg and whisk it into the crumbs. Add the ground beef, 1 teaspoon beef bouillon powder, 1 teaspoon onion powder, 1 teaspoon garlic powder, salt, pepper, and grated Parmesan cheese. Mix everything together with your hands until fully combined.
Pinch off small portions of the mixture and roll them into tiny meatballs. Set aside.
Heat the olive oil in a skillet over medium-high heat. Add the meatballs and cook for 6–8 minutes, depending on their size, until browned and cooked through. Remove the meatballs from the skillet and drain any excess grease.
Reduce the heat to low. Add the tomato sauce, beef broth, heavy whipping cream, 1 teaspoon beef bouillon powder, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Stir until the mixture is heated and just about to simmer. Gradually add the cheese in small batches, stirring continuously until fully melted and smooth.
Add the cooked meatballs and pasta to the skillet. Let everything simmer together for 5–10 minutes, allowing the sauce to thicken. Serve and enjoy!
